I'm mostly concerned with impressing her with an awesome outdoors gift. Are these knives popular? She'd use it for backpacking and weekend camping.
Answer
A camping and backpacking tool is a bit lighter duty than the survival knife you are considering. While $57 is a nice gift, I would prefer a lighter tool for camping. On backpacking trips, all I carry is a Victorinox Climber, $18. I suggest that you list the tasks that should be accomplished with the tool that you intend to buy. Then, buy the tool for the tasks. A single tool does not adequately perform for all camping tasks.

My top 10 list of basics for car camping:
1. Rain gear: coated nylon poncho or waterproof/breathable jacket and pants.
2. Tent, plastic ground sheet, stakes, mallet
3. Mummy bag (rated to minimum temp expected)
4. Foam sleeping pad(s) or insulated inflatable pad (Thermarest)
5. Camp stove, lighter, utensils, knife, cups, plates, can opener, paper towels, etc.
6. Cooler, full of ice and perishable food, drinks
7. Bug spray, with DEET

8. Sunscreen, hat
9. First Aid Kit
10. Flashlight, spare batteries, gas lantern, gas
Just remember, for first timers it's better to borrow or rent equipment than buy brand new if at all possible, because it'll be a learning experience, and you may either not like it at all, or discover how little you really need to be comfortable, or decide you want a lot more comfort, or decide to try backpacking in the wilderness.
