We are leaving for WDW in less than a month for our first visit. My daughter is 7 and my son is 13. I am looking for some fun and/or interesting ways to help us bridge the gap between now and when we leave. We are already counting down the days with a paper chain. Thanks!

I do the paper chain, too! Uhhh... 146 days for me!
I read on this website about how this mom would leave notes in her kids' lunch boxes or backpacks. They'd say, "In ___ days we'll be at the Magic Kingdom!" or "In ___ days we'll be having breakfast with Mickey and the gang!" I don't know... I think it's a cute idea.
I've read of some families watching a different Disney movie every night before bed until they leave for their trip.
Get the family to save all their change! One of my favorite parts about Walt Disney World is collecting all the different pressed pennies. And there are hundreds of them and they change fairly often! I've been saving up my change since I got back from my last trip in August. It's much easier to already have a baggy of coins to bring to the theme parks rather than have to find a change machine or get change at a register each time you see a cool pressed penny machine.
Maybe go for a short walk each evening to discuss the things you're going to do and to get your legs ready for all the walking you'll be doing around Walt Disney World.
I just spend my days planning. I can literally spend everyday planning my vacation until the day before I leave. It's so much fun! And I ordered the free Walt Disney World vacation planning DVD from the website, so I watch that just about everyday, too!

What are some NGO`s I can volunteer with?

I want to volunteer overseas during my year off and was wondering which ones are the best to volunteer with and why.

Well if you're looking for gap year programs relating to volunteering in general i do have a few ideas. I'm not sure if these are considered NGOs or not but they are really cool and I think you may like them.
1. http://www.operationsmile.org/ This is an organization I think you would really like. They go overseas and try to give aid to kids with medical problems with their teeth n stuff. My friends have done it before.
2. http://www.crossculturalsolutions.org/ has really good options for volunteering abroad during a gap year.
3. http://www.rusticpathways.com/gapyear.html has gap year programs basically all over the world, looks really awesome
4. http://www.wheretherebedragons.com/programs.semester.php my friend is backpacking w/ this group for 6 weeks in morocco this summer. its really reputable & they have longer programs for semester/gap year things, too
5. Lastly, I know it's not overseas, but it's through the US Government, and you get paid a little for doing it, and it seems really cool: http://www.americorps.gov/
