A day pack (not a camping backpack) is considered a "personal item", just as a purse is. Most airlines allow a carry-on suitcase and one "personal item".
Check the airline's website for more details about acceptable forms of carry-ons.

I want to travel to the far east and will be flying on a number of planes. I have one backpack that I will live out of that will be carry on. I will be spending a lot of time hiking, camping, and being outdoors while I travel. One thing I want to bring is my multi purpose survival knife and don't know how to take it with me/keep track of it while hopping planes. Is there any safety box or place that I can declare it to avoid checking my bag? I am very hesitant to check the baggage as I have had multiple items damaged and destroyed on other flights. Also losing the bag could be very catastrophic if it happens in the wrong place. In the past I have accidentally brought it on board after it went through screening. I don't imagine this is something I can rely on and so want to know if there are any other options.

No, there are no safe boxes onboard aircraft.
The knife will have to go in your checked baggage unless you want to chance trying to take it through security where if its found it will be disposed off.
