What is some cheap camping/backpacking food?

I planning on backpacking across the United States. What are some cheap options for feeding myself over 2 months on the go? I will carry everything in my back pack, have frequent access to supermarkets and infrequent access to a kitchen.

Is it legal to carry large knives while camping?

I know in is illegal to carry a knife longer than 3 inches in public where I live, but is camping/ backpacking an exception to the rule? I live in western Washington and do not want any of my knives to confiscated.

to be specific about the knives in question:
7.5 inch bowie style marine combat knife
8 inch tanto
4.5 inch dagger style boot knife
and a 24 inch tanto machete
